We feel that part of our responsibility to the community and as a business is to source product with integrity and of the highest quality we can find. The process of finding ingredients and transforming them into cuisine are not separate events, but one continuous action, constantly informed by seasons. Good Earth Farms here in Bend provides our salad greens which are grown without the use of pesticides or herbicides.
We purchase vegetables and goat milk cheeses from Juniper Grove Cheese in Redmond.
Ancient Heritage Dairy in Madras provides cheeses made from their grass raised flock of sheep and cows milk from their neighbors Poland Organic Dairy.
We only purchase wild fish from sustainable fisheries.
Our lamb is raised by Imperial Stock Ranch here in Central Oregon and grass fed without the addition of antibiotics or hormones.
Our chicken is sourced from the Draper Valley Farms cooperative here in the Northwest where they are raised free of antibiotics and hormones on a vegetarian diet.
Our pork is from Carlton Farms where they raise their hogs on a vegetarian diet free from hormones and antibiotics.
